Pairings:Perfect as an aperitif and throughout the meal. It pairs well with fish dishes, pasta with vegetables, and surprisingly with fresh peaches.
Aging:36 months on lees in the bottle, followed by another 7 months of rest in the cellar after disgorgement
We deliver throughout Italy via express courier in 1–3 business days. For smaller towns and islands, delivery may take 2–4 business days.
Deliveries are made from Monday to Friday, generally between 9:00 AM and 6:00 PM. We recommend providing an address where someone is always present.
Soil:Silty and clayey-silty alluvial deposits, with low organic carbon content and limited availability of organic matter.
Altitude:130 m a.s.l.
Harvest:Between the end of August and the first week of September.
Vineyard:25-year-old vines, density of 3,500 vines per hectare, Guyot training with double spur and spontaneous grassing.
Yield:Maximum production of 50 q/ha, equal to approximately 1.5 kg per plant.
Vinification:Manual harvesting in 15 kg crates and soft pressing of the grapes.
Fermentation:Spontaneous, without the use of selected yeasts. Fermentation takes place in steel with careful management of temperatures, rackings, and oxygenation. No filtration.
Second Fermentation (Prise de Mousse):In spring, chilled must from the same grapes, from the same vineyard, and from the same vintage is added to start the second fermentation in the bottle. The bottles rest horizontally for 36 months, followed by manual riddling and disgorgement. Topping up is done with a small quantity of the same wine from the previous vintage, creating continuity between the different vintages.
