Soil:Alluvial silty and clay-silty deposits, with low organic carbon content and limited availability of organic matter.

Altitude:130 m a.s.l.

Harvest:Second week of September, with careful selection of grapes.

Vineyard:15-year-old vines, density of 4,000 plants per hectare, Guyot training system with double spur and permanent spontaneous grassing.

Yield:Maximum production of 55 q/ha, equal to approximately 1.3–1.4 kg per plant.

Winemaking:Manual harvesting in 15 kg crates and soft pressing of the grapes.

Fermentation:Spontaneous with indigenous yeasts in steel, with careful management of temperatures, rackings, and oxygenation. No filtration.

Refermentation:In spring, refrigerated Cortese must is added to start refermentation. The wine is then bottled and sealed with a crown cap.
