Aging:In steel until the following spring, followed by refermentation in the bottle by adding refrigerated must from the same grape variety
We deliver throughout Italy via express courier in 1–3 business days. For smaller towns and islands, delivery may take 2–4 business days.
Deliveries are made from Monday to Friday, generally between 9:00 AM and 6:00 PM. We recommend providing an address where someone is always present.
Soil:Silty and clay-silty alluvial deposits, with low organic carbon content and limited availability of organic matter.
Altitude:130 m a.s.l.
Harvest:Second week of September, with careful grape selection.
Vineyard:15-year-old vines, density of 4,000 plants per hectare, Guyot training system with double spur and permanent spontaneous grassing.
Yield:Maximum production of 55 q/ha, equivalent to approximately 1.3–1.4 kg per plant.
Winemaking:Manual harvesting in 15 kg crates and soft pressing of the grapes.
Fermentation:Spontaneous with indigenous yeasts in steel, with careful management of temperatures, rackings, and oxygenation. No filtration.
Refermentation:In spring, chilled must from the same grape variety is added to start refermentation. The wine is then bottled and sealed with a crown cap.
